Hope you had an amazing holiday, i know i did….well i know that we’ve been eating continuously through out this holiday. My mum always says if you don’t add some weight during this holiday them u haven’t been living. As a typical Kenyan i know its our tradition to eat all sorts of food…whether healthy or unhealthy, so here is a simple diet menu to help you out.
BREAKFAST
1 Poached egg over a whole english muffin
1 cup sliced funnel sauteed in 1 table spoon sliced basil
and cracked black pepper
Serve with fresh peppermint tea ( crush fresh leaves and steam in hot water)

MORNING SNACK
1 Cup plain non-fat yoghurt
2 tablespoon of roasted sunflower unsalted seeds
1 table spoon honey

LUNCH
1 Cooked Israeli couscous tossed with 2 pitted unchopped dried plum
1/4 cup diced red bell pepper
1 tablespoon minced onion
1 tablespoon homemade vinaigrette
1 tablespoon toasted pine nuts

AFTERNOON SNACK OR EVENING
1 Large wedge of cantalope melon
2 slices lower sodium ham
and 1 ounce of unsalted chopped pistachios
DINNER
1 Reduced fat whole wheat tortilla filled with three ounces of grilled shrimp
2 table spoons mashed avocado
1/4 cup fresh bell pepper salsa (diced red bell pepper , red onion and chilli pepper with lime juice
1 cup baby arugula
follow with fresh cup of peppermint tea
